Abstract

Apart from hygiene requirements for the production and offering of sale of game meat, this Decree specifies hygiene requirements for the storage and transportation of such meat and provides for the control of hygienic conditions. "Game meat" is defined as all parts of game fit for human consumption. "Game" is also defined in section 2. Section 3 contains general conditions for the approval of game meat. All game meat supplied for human consumption shall be inspected and approved by the controlling veterinary. Game meat shall originate from areas where no health restrictions are in force. Other provisions of Chapter I, inter alia, prescribe special control measures which shall be adopted by meat producing or processing enterprises. Chapter II contains requirements with respect to the construction and the fitting out of premises used for the handling of game meat, including requirements regarding water supply (sect. 15). The remaining Chapter provide for: hygienic requirements for employees, premises and equipment (III); Hygienic requirements after killing, relating to transportation, cutting up and preparation of game or game meat (IV); Packing and wrapping up (V); Storage and transportation (VI); Control of game meat (VII); Game meat offered on the domestic market controlled by a control station (VIIa); Administrative provisions (VIII).
