Abstract This Regulation of the Minister of Health is composed of seven articles. The director of the mass caterer of closed type appoints a person responsible for taking and storing samples of all dishes included each meal. It is obligatory to place contents, date and time of preparing the dish, name and position of the person who took the sample on the packaging or container intended for storing samples. The institution keeps the samples for at least three days from the data of consumption. The place of storing samples has to be secured so that only the manager or the authorized person have access to it.
