Abstract This Regulation sets forth hygiene requirements of small-scale slaughterhouses and procedures and principles of approval of these enterprises, in accordance with the provisions of legislation regarding animal welfare, animal health, food safety and public health. This Regulation covers small-scale enterprises in which domestic ungulates are slaughtered. This Regulation sets out requirements such as certification of small-scale slaughterhouses, appointment of official veterinarian and compliance with HACCP procedures, as well as requirements regarding transfer of animals, food chain, animal health, control posts, processing building and equipment, sanitation facilities, storage and transportation.
