Abstract This Regulation of the Minister of Health, which is composed of three paragraphs, establishes general derogations from hygiene rules for enterprises producing traditional food of non-animal origin in the scope required for application of traditional methods of food production. Derogations must not have negative impact on the safety of produced food, and in particular must not cause food contamination.
