Abstract

These Regulations, made under sections 14, 156 and 170 of the Public Health Act 1949, require every victualling establishment to have installed, in relation to that establishment, a FOG removal device. A “FOG removal device” means a device which intercepts, traps or collects fats, oils and grease derived from the production, preparation, or manufacture of food (FOG), separates it from wastewater, and prevents it from entering a sewerage system and is conform to specified standards. The Regulations also concern the disposal of FOG and prohibit the introduction of any food waste into a sewerage system.
