Abstract This Order lays down detailed rules on the examination of meat in Denmark (art. 3) of Trichinella found in meat and in adherence to EU regulations. Carcasses of pigs shall not be tested for Trichinella if it is demonstrated these were raised under controlled animal keeping conditions. Slaughterhouses and game handling establishments must ensure for Trichinella inspection as follows: carcasses of pigs from herds not qualify for controlled animal keeping conditions (Commission Regulation EC No. 2075/2005 - Annex IV). Carcasses of horses, and wild animals, including wild pigs susceptible to Trichinella. Results of samples taken for Trichinella in accordance with this Order must ensure that they are analyzed at specially accredited laboratories and by certified professionals in in accordance to Annex I, Paragraph III, Chapter III, Part B of the European Parliament and Council Regulation (EC) No 854/2004 of 29 April 2004 on control regulation for food of animal origin.
