Abstract This Decree of the Ministry of Agriculture is composed of 11 articles and nine Annexes. Carcasses of cattle are classified into the following categories: calves, young animals, young bulls, bulls, steers, cows, heifers. Carcass of cattle after slaughter is classified into an appropriate category, taking into account information provided the accompanying documents. Carcasses of cattle and sheep are marked immediately after the classification. After the classification the appropriate protocol should be prepared in the form specified in Annexes 4 and 5.
