Abstract Articles 1 and 2 of the Presidential Decree give the definition of coffee extracts and chicory extracts. "Coffee extract" means the concentrated products obtained by extraction from roasted coffee beans using only water as the medium of extraction and excluding any process of hydrolisis involving the addition of an acid or a base. "Chicory extract" refers to the concentrated product obtained by extraction from roasted chicory using only water as the medium of extraction and excluding any process of hydrolisis involving the addition of an acid or a base. Legislative Decree No. 109 of 27 January 1992, in matter of labelling and packaging, shall apply to coffee extracts and chicory extracts. However, the product names shall be supplemented by the words "paste" (or "in paste form") or "liquid" (or "in liquid form") as appropriate. Annexes I and II lay down the limit values related to dry matter content of coffee and chicory extracts respectively. To use the above-mentioned products names, such limit values must not be exceeded.
