Abstract

The present Ministerial Circular contains provisions to clarify the rules laid down in Presidential Decree No. 309 of 1998. The Circular is divided into ten points explaining in particular: (1) the production and market to which the above-mentioned Decree shall apply (the production and the placing on the market of meat pieces of less than 100 gr are excluded); (2) minced meat (materials that may be used, requirements to be met for the production of frozen minced meat); (3) meat preparations (the use of rabbit and game meat is allowed); (4) self-control; (5) veterinary inspection; (6) packaging; (7) sanitary stamps; (8) transport; (9) the procedure to be followed to recognize establishments producing minced meat and meat preparations; (10) import and related requirements to be met.
