Proprietors of food businesses must comply with the requirements prescribed in the Schedule attached to those Regulations. They may derogate from compliance with the hygiene provisions provided that they do so in accordance with Commission Directive 96/3/EC, as amended by Commission Directive 2004/4/EC, or in accordance with Commission Directive 98/28/EC.
