Résumé

This Resolution consisting of 107 articles aims to ensure a food production that is safe and fit for human consumption by determining the general rules for food hygiene that apply to all food establishments throughout all stages of the food chain, including primary production, manufacturing, preparation, processing, packaging, storage, distribution, display, serving, selling or donation og foodstuff. It includes the following (i) obligations of the responsible for the food establishment including permits, import regulations, hygine rules; (ii) initial production operations, mostly aimed at guaranteeing the cleanliness of personnel and environments, together with the respect of plant and animal health used in food production in order not to cause risks during consumption; (iii) location, design and architecture; (iv) equipment and tools; (v) health and personal hygiene for food handlers; (vi) temperature control in the phases and places of storage; (vii) food handling areas; (viii) food reception and storage; (ix) water supply to ensure the presence of drinking water and sufficient water supplies for all stages of processing; (x) food transport, including import and export, dealing with permits, temperature; (xi) food display, to protect food from the risk of contamination or pollution during exposure; (xii) food waste, such as separation and removal of food waste in an environmentally friendly way; (xiii) respect of the Food Safety Management Systems; and (xiv( rules for mobile and temporary food establishments.
