Résumé This Methodical Instruction establishes the modalities for identifying and diagnosing parahemolytic vibrios in fish and fish products through sanitary and epidemiological supervision. Parahemolytic vibrios are pathogenic microorganisms of the Vibrionaceae species populating saltwater water bodies. There is a danger of enteric infection outbreaks wherever seafood is consumed. The following fish products shall be subject to microbiological analysis: (a) raw fish; (b) salted fish; (c) sun-dried fish; (d) smoked fish; (e) canned fish; and (f) caviar. In the process of diagnosis, only ready culture media authorized for use if the Russian Federation shall be used.
