Résumé

The Regulation consists of 8 Sections dealing with the following matters: 1) general requirements (sect. 1); 2) terms and definitions (sect. 2); 3) basic provisions (sect. 3); 4) veterinary and sanitary requirements for slaughterhouses (sect. 4); 5) organization of veterinary and sanitary inspection of slaughterhouses (sect. 5); 6) veterinary and sanitary requirements for sanitary inspection rooms of the slaughtering section of the enterprises (sect. 6); 7) veterinary and sanitary requirements for domestic slaughtering (sect. 7); 8) safety requirements for meat and other products of slaughtering (sect. 8). The present Regulation establishes veterinary and sanitary requirements for slaughtering and primary processing of animals (poultry) at the slaughterhouses, slaughtering sections of the enterprises and subsidiary small-holding (domestic slaughtering), the modalities of veterinary and sanitary inspection of meat and products of slaughtering, and also the modalities of subsequent utilization or trade of produce. Domestic slaughtering shall be authorized for proper consumption of meat and products of slaughtering. Slaughtering in places that are not fit for such activity (forest belts, stock buildings, near water reservoirs, etc.,) shall be prohibited. Swine must be processed on the face line destined for slaughtering of cattle while sheep and goats must be processed at a separate section of suspension conveyor. Special sections shall be destined for slaughtering of poultry, rabbits and nutria. Slaughtering of animals carriers of infectious disease or suspected of being sick of infectious disease shall be prohibited. Meat and other products of slaughtering shall meet national quality and safety requirements set for each species.
