Résumé This Instruction applies to grain-collecting, milling and baking enterprises, trading enterprises and authorized state institutions carrying out food quality and food safety control. Potato bacillus gets into flour in the process of milling of grains already infected during harvesting. The basic condition for the prevention of potato disease shall be the strict observance of technological and sanitary conditions in the storage, processing and trade of grains, flour, and bread making, as well as the organization of laboratory testing. The following measures for the prevention of development of potato bacillus shall be implemented: (a) grain arriving at grain elevators must comply with normative and technical documentation, sanitary regulations and quality and safety standards; (b) each lot of grain destined for processing shall be accompanied by a quality certificate; acceptance of grain lots without quality certificates shall be prohibited; (c) wheat flour shall be subject to periodic examination for the presence of potato bacillus by test-baking bread in laboratories; and (d) the State Sanitary and Epidemiological Supervision Service shall conduct hygienic testing of bread infected with potato disease.
