Résumé

This Regulation establishes specific norms applied to official meat inspections for trichinosis, with a view to preventing, excluding or reducing the risks of Trichinella infection to a level acceptable to human and animal health. In the postmortem examination of carcasses to detect the presence of Trichinella, the veterinarian, without fail, selects samples from the carcasses at the slaughterhouse or at the game handling and processing facilities, in particular shall inspect: (a) all carcasses of reproducing sows and boars or at least 10% of animal carcasses sent annually for slaughter from each facility included in the List of facilities using controlled conditions of detention; (b) all carcasses of animals sent to slaughter from objects not included in the List of objects using controlled conditions of location; and (c) all carcasses of horses, wild boars and other species of grown or wild animals, susceptible to infection with Trichinella. If there is a procedure in the slaughterhouse approved by the official National Food Safety Agency that reliably guarantees that no part of the carcasses examined will be removed from the place of storage until it is confirmed that examination results to identify the presence of Trichinella are negative, then it is possible to apply a health stamp (marking) stating that animals are healthy or products deriving therefrom are safe for human consumption. The Agency monitors domestic pigs, horses and other species sensitive to Trichinella at sites officially recognized as free from Trichinella, or in regions where the risk of Trichinella infection in domestic pigs is considered negligible, in order to verify whether these animals are free of Trichinella, specifying the frequency of examination, the number of animals subject to testing and identification the presence of parasites of Trichinella. A study to identify the presence of Trichinella in meat shall be performed in a whole carcass, and, if necessary, in each half of the carcass or every quarter, every part or piece of carcass. Annex 1 contains methodology for identification of the presence of Trichinella in meat. Annex 2 specifies treatment methodology by freezing. Annex 3 deals with examination of some animal species not pertaining to swine category. Annex 4 contains model form of food safety declaration.
