Résumé

The purpose of this Technical Regulation on milk and dairy products is to protect the health of the population by providing accurate information about the consumption characteristics, types, composition and function of milk and dairy products. This Technical Regulation shall be accompanied by granting and renewing permits for milk and dairy products processing and trading, and accrediting the factory's internal control laboratory, monitoring of production activities, and covering compliance guarantees. Milk and dairy products factory is isolated from any unfavorable environment (danger of flooding, water, swamp, frost, loose soil, waste disposal site, unpleasant odor, smoke, dust, other pollution) and upwind direction, which is located in a clean environment. All stages of production technology, such as receiving raw materials, manufacturing products, packaging, storage, and transfer to transportation, are organized in one direction and optimally. The plant must be connected to a centralized or regional water supply and sewage system. The manufacturing of milk and dairy products for infant food shall be carried out in a designated building that meets sanitary and hygienic requirements, or in an isolated room or building of a milk and dairy product processing plant. In the processing of milk and dairy products, special equipment and tools that meet technological requirements shall be used. Equipment and tools should have flat, smooth (no holes or cracks), surfaces made of stainless materials, suitable for cleaning, disinfection, and sterilization. Equipment and portable equipment for the processing of milk and dairy products shall have a special identification mark.
