Animals must originate in an area or farm certified to be free from Anthrax and Bovine Spongiform Encephalopathy. Slaughter must be carried out at approved abattoirs. Regulation 3 refers to the procedures to be adopted at the mentioned abattoirs, relating to ante-mortem and post-mortem inspections, treatment of carcasses (processing, packaging and storage). The meat cannot contain any preservative, colouring matters or foreign substances. Regulation 4 deals with transport of meat. Consignments shall be accompanied by a meat inspection certificate. All meat must be labelled by indicating establishment number of abattoir and packing plant, lot number, date of production and type of slaughter. Texto completo Inglés
