Resumen The ordinance regulates the food law measures to be taken by food business operators for the early detection of zoonoses and zoonotic pathogens as a basis for assessing their origin and the trends in their occurrence. Zoonoses are defined as diseases or infections that can be transmitted naturally, directly or indirectly, between humans and animals and zoonotic agents are viruses, bacteria, fungi, parasites or other biological agents that can cause zoonoses.
