The control of nanomaterials in the composition of specialized food products includes the following stages: (a) identification of the nanomaterial in the composition of the product; (b) determination of the characteristics of a nanomaterial (size, shape of particles, size distribution, chemical composition, presence of impurities, stabilizers, composition of substances adsorbed at interphase boundaries, other characteristics, if necessary); and (c) quantitative determination of the content of nanomaterial (nanoparticles, nanoobjects) per unit mass of food products. When choosing specialized food products for control, one should be guided by the belonging of products to those groups that, according to their production technology, storage conditions, provide for the use of nanomaterials and nanotechnologies and/or can be contaminated with nanoparticles and nanomaterials, data from regulatory technical documentation for products on the content of substances in the form of nanoobjects (nanomaterials), as well as those properties of the nanomaterials (nanoparticles, nanoobjects) included in their composition that determine their ability to maintain their dimensional properties (no irreversible aggregation, dissolution) when they are in the composition of products and / or when they enter the human body. The list of the main types of food products subject to control for the content of nanoparticles and nanomaterials is presented in Appendix A.
