For dry, semi-dry, semi sweet white wines: they are produced by the so-called "RODITIS", "ATHIRI" and "ASIRTIKO" local grape varieties. All varieties must come from the very same vinicultural zone "PLAGIES MELITONA" and they must not exceed the 70% of the total percentage of the wine's components. The mixture of such varieties must take place within the Macedonian region; grape cranes used for the transport from vineyards to distilleries must not exceed the 25 kg of capacity; the temperature of the alcoholic fermentation can not exceed the 20 C; the alcohol grade of such white wines should not be inferior of 10 % VOL. but it can not exceed the 12 % VOL. For rose and red wines the requirements are alike.
