A dairyman (any person carrying on the business of a dairy) will now be required to have his or her business licensed by the food authority, a food authority being an islands or district council. These Regulations do not apply to shops selling pre-packed milk and consequently the Regulations contain a new definition of “dairy” which excludes shops. the Regulations also provide for inspection of licensed dairies and hygienic conditions of production, handling, storage and sale of milk.
