Resumen

Interstate Standard GOST ISO 14470—2014 “Radiation processing of foodstuffs. Requirements for the development, validation and routine control of the process of food irradiation with ionizing radiation” shall be applicable to foodstuffs manufactured in compliance with GMP. Food irradiation can be used for various purposes: to kill pathogenic microorganisms and parasites, to reduce the number of microorganisms that cause food spoilage, to suppress the germination of bulbs, tubers and root crops, to extend the shelf life of products, for phytosanitary treatment. Where possible, the food irradiation procedure should be included as part of the food safety management system (ISO 22000). From the point of view of the HACCP program (Hazard Analysis and Critical Control Points - Hazard Analysis and Critical Control Points), the food irradiation procedure is a critical control point (CCP) that helps to minimize the risks associated with contamination of consumers by pathogenic microorganisms. The main objectives of this Standard shall be as follows: (a) ensuring requirements for food irradiation in accordance with applicable standards and practices; (b) development of regulations that contribute to the achievement of an agreement on technical issues between the customer and the irradiator operator; and (c) development of a system for maintaining documentation on the means of controlling the process of irradiation of foodstuffs. This Interstate Standard specifies requirements for the development, validation and current routine control of a process for exposure to ionizing radiation in food processing, and provides guidance on how these requirements can be met. The scope of this standard covers irradiation processes using Co or Cs radionuclides, as well as generators of electron beams and x-rays. The requirements of this International Standard are the minimum requirements for the control of food irradiation.
