Resumen

The Government decrees to validate the Regulation. The Government decrees that food shall conform to the microbiological requirements established in the Regulation. The maximum authorized levels of microorganisms are presented in the Annex. Foodstuffs are considered not conform to the microbiological requirements if the level of microorganisms exceeds the maximum allowable level established by the Annex. The document consists of 2 paragraphs. Paragraph 1 lays down general provisions. Paragraph 2 regards microbiological criteria. Micro-organisms present in foodstuffs are divided into four groups: Group 1 regards micro-organisms characterizing quality and microbiological stability of food; Group 2 regards micro-organisms indicating poor hygiene, or indicator bacteria; Group 3 regards potentially pathogenic micro-organisms; Group 4 regards micro-organisms constituting a direct hazard to health, including pathogenic micro-organisms and agents causing parasitic diseases.
