Resumen

This Technical Regulation establishes the minimum requirements for quality and food safety, presentation and labeling, which must be met by meat products intended for sale to the population, both domestic and imported. The requirements for quality and food safety provided for by this Technical Regulation do not apply to meat products produced by individual farms for personal consumption. Producers of meat products intended for distribution to the public shall have as their primary objective the protection of consumer health, quality assurance and good practice in accordance with the provisions of Codex Alimentarius. Quality and food safety involve ensuring compliance with and fulfillment of established requirements, food hygiene throughout the production process, from raw materials to the consumer, for the entire shelf life of the product. Quality and food safety are ensured by monitoring and management systems and methods based on a series of standards, which are necessary to ensure the systematic warning of possible hazards and the provision of information on the identification of the establishment, shift, release date, batch, quantity, type and quality of products. Producers of meat products must ensure that records are kept that allow identifying products for three years and, if necessary, provide documentary evidence of compliance with the quality and safety requirements provided for by this Technical Regulation. For the production of meat products, the use of the following meat raw materials is prohibited: (a) frozen more than once; (b) meat of bulls and boars; (c) with signs of salting and yellowing; and (d) expired.
