These requirements concern the manufacture and placing on the market of food hygiene and safety of products of animal origin. Specific requirements are laid down for meat, meat products, eggs, poultry products, and dairy products. The requirements concern identification marking, packing and labelling, HACCP-based procedures, transport of live animals to the slaughterhouse, slaughtering, processing, storage and transport, etc. Food business operators operating slaughterhouses must ensure that the procedures that they have put in place are in accordance with the general requirements of the Food Safety (General Food Hygiene) Regulations. Products of animal origin” means— (a) food of animal origin, including honey and blood; (b) live bivalve molluscs, live echinoderms, live tunicates and live marine gastropods intended for human consumption; and (c) other animals destined to be prepared with a view to being supplied live to the final consumer.
