This Resolution enters into force on the day of its publication.
Resumen

This Resolution approves the Technical Regulation of Standard Operating Procedures and the Checklist of Good Manufacturing Practices applied to Food Producing/Industrializing Establishments. Annex I specifies the Technical Regulation of Standard Operating Procedures applied to Food Producing/Industrializing Establishments. Its objective aims to establish Standard Operating Procedures that contribute to guarantee hygienic-sanitary conditions necessary for the processing/industrialization of food, complementing the Good Manufacturing Practices. It applies to processing/industrializing establishments in which some of the following activities are carried out: production, industrialization, storage and transportation of industrialized foodstuff. These food establishments should develop, implement and maintain Standard Operating Procedures (POPs) for each item listed below: a) Sanitation of the premises, equipment, furniture and tools; b) Control of water potability; c) Hygiene and health of handlers; d) Waste management; e) Preventive maintenance and calibration of equipment; f) Integrated control of vectors and urban pests; g) Selection of raw materials, ingredients and packaging; and h) Food collection programme. Annex II lists the Checklist of Good Manufacturing Practices in Food Producing/Industrializing Establishments.
