Resumen

These Regulations prescribe standards for potable water used by food processing enterprises (defined) in their processing of food operations. Food processing is a single action or series of actions to change the properties of food, excluded street vending and preparation of food by caterers and restaurants. The requirements regard not only water used in food but also water used for cleaning and drinking water. Any food processing enterprise shall ensure that water used in its operations meets standards of the American Public Health Association, the American Water Works Association, the Water Environment Federation, and the United States Environment Protection Agency. The water shall not contain any of the bacteria specified. These Rules shall not apply to specify chlorinate water and enterprises that use alternative disinfecting methods that can provide assurance of food hygiene. (5 regulations)
