Abstract

This Resolution approves the rules for use of lactic acid to reduce microbiological surface contamination of bovine carcases or half carcases or quarters. It consists of four articles: General provisions (1); Conditions of use of lactic acid to reduce microbiological surface contamination of bovine carcases or half carcases or quarters at the level of the slaughterhouse (2); Minimum HACCP criteria and control parameters (3); and Information on the treatment (4).
