Abstract

The Resolution provides for general requirements for food/feed production, processing and distribution. It consists of general and simplified rules for food/feed. The general rules (Annex 1) include 17 articles: General provisions (1); Definition of terms (2); Hygiene requirements for primary production and associated procedures (3); Requirements imposed on the industrial territory (4); Requirements imposed on the industrial premises (5); Requirements imposed on the storage facilities where food/feed is produced and/or processed (6); Requirements imposed on moving or temporary constructions (7); Requirements imposed on water supply and sewerage (8); Requirements imposed on equipment and devices (9); Requirements imposed on food/feed (10); Labeling and packaging requirements (11); Thermal treatment (12); Waste management (13); Disinfection (14); Requirements imposed on transportation of food/feed (15); Personal hygiene and health of staff (16); and Training of staff (17). The simplified rules (Annex 2) include 12 articles: General Provisions (1); Hygiene requirements for primary production and associated procedures (2); Requirements imposed on the enterprise (3); Requirements imposed on the storage facilities where food/feed is produced and/or processed (4); Requirements imposed on water supply and sewerage (5); Requirements imposed on equipment and devices (6); Requirements imposed on food/feed (7); Labeling and packaging requirements (8); Waste management (9); Disinfection (10); Requirements imposed on transportation of food/feed (11); and Personal hygiene and health of staff (12). The rules are mandatory for all business operators involved in food/feed production, processing and distribution. The Resolution permits using different methods from its requirements if the business operator proves that it has in place other type of hygiene measures. The general rules do not apply for instance family production and small business operators, as well as operators that use traditional methods. Some of these subjects are instead required to follow simplified rules also provided in the Resolution.
