Abstract The aim of this Resolution is to protect the environment and prevent from pollution. The Ministry of Environment has the authority to give the licences of environmental compliance for the establishment of olive presses. The main stages of oil extraction are listed in this Resolution. The Resolution defines the different contaminants resulting from olive presses (such as olive residues) and the environmental conditions required to obtain the licence (water management, air pollutants management and noise pollution management).
