Abstract This Regulation, as in accordance with the provisions of the Serbian Food Safety Law, prescribes quality requirements for fishery products, shellfish, sea urchins, sea cucumbers, frogs, turtles, snails and their products. This text also sets the classification, categorization and product name; physical, chemical, physico-chemical and sensory properties, as well as food composition; physical, chemical, physico-chemical and sensory properties of raw materials, as well as the type and quantity of raw materials, additives and other substances used in food production and processing, including elements of essential technological procedures applied in food production and processing; packaging and declaration and additional food labelling requirements. The provisions of this text do not apply to traditional products whose method of production, quality and special properties are regulated by a regulation governing the protection of products of traditional name/specialty, name of origin and geographical indication, i.e. products on the list of protected and recognized products nationally and internationally.
