Abstract This Regulation sets forth hygiene requirements of small-scale slaughterhouses and procedures and principles of approval of these enterprises, in accordance with the provisions of legislation regarding animal welfare, identification of animals and traceability of food of animal origin, animal and public health including established rules for the prevention, control and elimination of transmissible spongiform encephalopathy. This Regulation shall apply to small-scale slaughterhouses in which domestic ungulates are slaughtered. This Regulation sets out requirements such as certification of small-scale slaughterhouses, appointment of official veterinarian and compliance with HACCP procedures for risk analysis, as well as requirements regarding transfer of live animals, food chain, animal health, control posts, processing building and equipment, sanitation facilities, storage and transportation.
