Abstract This Regulation consisting of 19 articles aims at guarantying food safety by regulating methods and procedures for official control of the safety and quality of foods and shall apply to all stages of the food chain including the production, processing, catering, distribution, marketing, importation and exportation of food. Main provisions establish that: (i) sampling shall be undertaken for a single food item, regardless of the size, where it has been produced under the same conditions; (ii) shall be performed by authorized and trained persons; (iii) precautions shall be taken during sampling to avoid contaminating samples from any source; (iv) the type of equipment used for the sampling of food shall be consistent with sample size tables published by the Authority; (v) samples shall be maintained at such temperatures during transport and storage; (vi) a record shall be kept of each sampling; (vii) each sample shall be sealed at the place of sampling and identified with the information listed in art.12.
