It also provides for the classification of olive oils into categories and subcategories. The Regulation consists of three Chapters: (I) General provisions; (II) Definitions and quality standards for olive oils; (III) Methods for quality analysis. The Ministry of Agriculture and Food shall set up the Commission of Experts for Olive Oil Evaluation, which will operate in compliance with ministerial guidelines.
