The use of non potable water for the production and preservation of products intended for human consumption shall be prohibited (art. 2). Natural mineral waters are not encompassed. Article 4 gives detailed definitions in order to clearly delimitate the application scope. The annexes attached set out microbiological and chemical characteristics applicable to potable water.
