Abstract The present Regulation of the Minister of Health, which is composed of 12 paragraphs, establishes the scope and methods of internal sanitary controls of food quality and hygiene provisions to be applied in enterprises producing or introducing food into turnover. The internal control includes evaluation of: obeying provisions of good hygienic practice (GHP), obeying provisions of good manufacturing practice (GMP), including parameters of technological processes; regularity of activities connected with an implemented HACCP system; conditions and way of introducing food into turnover, including storage and transport.
