They also provide for (a) authorized officers to enforce the Regulations and (b) the prosecution of offences. Pig carcases shall be graded at the time of weighing by estimated percentage lean meat content as determined by one of the methods authorized in the Commission Decision 87/293/EEC. Regulation 6 specifies the methods that are authorized for grading pig carcases in Ireland.
