Abstract This Ordinance, as in accordance with the provisions of the Bulgarian Law on food, determines specific requirements aimed for the production of foodstuffs of animal origin in slaughterhouses. These provisions shall apply to large and small ruminants, pigs, birds (broiler chickens, waterfowl, turkeys, ostriches and other species of birds) and mammals of the order Lagomorpha (such hares, rabbits, and pikas).
