Abstract

This Order establishes sanitary procedures for fresh meat production and its placing into the market. It lays down sanitary requirements for slaughterhouses (specifying: slaughtering methods, meat conservation, animal parts, sanitary authorizations, fresh meat for human or non-human consumption, animal inspection ante and post mortem, transport, import-export between EU territory and third countries, etc.). It lists slaughterhouse requirements and competent veterinary authority certification, specifying animal species, hygiene measures, sanitary inspection ante and post mortem, sanitary controls (particularly related to prohibited substances and pests contained in such meat), sanitary meat marking and packaging requirements, general requirements for approving slaughterhouses with low capacity. A specimen model sanitary certificate is attached to annex 4.
