Abstract This Ministerial Order approves the Hygiene and Sanitary Requirements for aquatic animal production. These Requirements, consisting of 5 Parts divided into 76 articles, establish terms and conditions to be satisfied in order to perform aquatic animal production activity. Requirements are divided as follows: Personal Hygiene (Part I); Primary production and hygiene requirements (Part II); Freezer and industry fishing vessels requirements (Part III); Operations of production phases, transformation and distribution of aquatic animal products after the primary production phase (Part IV); Specific operational requirements related to aquatic animal products' processing (Part V).
