Abstract

This Decree allows the addition of malted cereals flour, malt extracts and of alpha-amylase and beta-amylase amiolitical enzymes to soft wheat flours. These types of flours, according to article 2, must have a diastasic power, not lower than 6.500 units of dry substance. Malt extracts must have a diastasic power, not lower than 4.500 units.
