Abstract

This Manual contains legislative requirements, guidelines and recommendations for the production of safe and quality honey. Among others, it provides for the model practice of bee-keeping; selection of the location for a bee hive and placing a bee family; selecting a bee family; general principles for checking a bee family; a spring check-up; questions to be asked while checking a bee family; routine summer check-up; swarm prevention; harvesting honey; nucleus (small sized new family); the end-of-summer work; checking the queen bee and treatment for varroa mites; additional feeding of families; emergency and urgent feeding; preparing the sugar syrup; feeders; processing of honey and quality management; hygiene requirements and HACCP; and honey processing facility, equipment, and storage.
