Abstract The law prescribes that the preparation by means of alkaline solutions of edible olives and their export shall be prohibited. Green olives and other olives that have been harvested prior to the completion of their ripening cycle and are processed by oxidation in an alkaline environment, shall be excluded from the provisions of this law.
