Abstract This Law, consisting of 13 articles, establishes the production process of artisanal rennet cheese within the State of Sergipe. It specifies hygiene and sanitary requirements to produce the above mentioned rennet cheese originated from fresh cow and buffalo milk. In addition, it establishes adequate colour and taste, without colourings and preservatives. Articles 2 lays down all the necessary sanitary procedures to be satisfied.
