Abstract

This Joint Regulation establishes the modalities of slaughtering at specialized slaughtering enterprises, and also the modalities of issuance and registration of permits for slaughtering to natural and legal persons. It ensures protection of public health against zoonotic diseases and strict observance of veterinary and sanitary rules and regulations in the process of slaughtering. Permits for slaughtering shall be issued only if veterinary and sanitary certificates attesting observance of sanitary and veterinary rules and regulations are available. Permits for slaughtering shall be issued by local self-government. Slaughtering facilities shall contain the following premises: (a) auxiliary area (service space); (b) receiving area for examination of animals; (c) shed for preslaughter keeping of animals; (d) slaughtering area; (e) segregation area; (f) butchering area, meat storing facilities; (g) gut room, skin salting room; veterinary office; and (h) tripery and treatment facilities.
