According to the Decision, the effectiveness of official controls is related to the limitation of existing or potential risks in terms of safety and the protection of the interests of the consumer and therefore the Decision establishes criteria for the classification of food businesses in risk categories and a scoring system concerning: company's risk profile, type of food produced or managed and its biological, chemical or physical risks and the specific categories of vulnerable consumers; food processing and handling processes and how they affect the safety, integrity and nutritional value of food.
