Abstract

Interstate standard GOST 33825-2016 Packed semifinished meet is a guidance for irradiation of packed chilled and frozen semi-finished meat products, except for poultry meat, rabbit meat and horse meat, in order to control parasites, pathogens and other microorganisms. The main purpose of irradiation is to limit (reduce the number) of pathogenic microorganisms such as Campylobacter, Escherichia co//0157:H7, Listeria monocytogenes, Staphylococcus aureus or 5a/glole//acpp in semi-finished meat products in order to ensure greater safety of these food products when consumed. Irradiation extends the shelf life of prepared meats by reducing spoilage-causing vegetative bacteria such as various Pseudomonas species and lactic acid bacteria. Irradiation inactivates parasites such as Trichinella spiralis and Toxoplasma gondii. In semi-finished meat products, the presence of parasites is unacceptable. The radiation exposure of the final product in its packaging is a critical control point (CCP) in the Hazard Analysis Critical Control Point (HACCP) system for processed meat products. This system serves as an important means of controlling residual risks caused by pathogenic microorganisms before the product reaches the consumer. In the document are indicated the necessary rules, the implementation of which ensures effective radiation processing of foodstuffs, which allows maintaining the required quality of the product, its safety and suitability for human consumption.
