It provides for: a necessary municipal license; location and details for interior decor; equipment, including source of water and wastewater drainage system. It also gives regulations for workers, such as health card, annual medical examination, uniforms and head-dresses, personal cleanliness. Specific measures are provided for foodstuff items, utensils, refrigerators for different kind of products. Other regulations regard: storage; preparation and washing rooms; kitchen and dining hall. These latter provisions regard the room area, separation between the different areas of the restaurant, necessary equipment for each room. The Regulation prohibits the use of kerosene and charcoal.
