Regulation 3 sets a general quality standard for carcasses. There shall be seven grades of beef, namely, Super Grade, Prime Grade, Super Grade, Grade 1, Grade 2, Grade 3 and Grade 4. The specifications of these grades are defined in regulation 4. Other regulations give specifications for the grading of mutton, lamb and goat meat. The owner of an animal or his or her agent may appeal against the decision of a meat grader to the Director of Veterinary Services (reg. 8).
