Abstract

These Guidelines specify the food safety risk points of food catering enterprises, including information publicity, raw material storage, rough processing, special room, special operation area, cooking area, dining area, tableware cleaning and disinfection area, tableware cleaning and document preservation. The Guidelines is applicable to licensed food catering enterprises.
